The project, started from a pre-existing spatial structure formed by seven exposed brick arches. Everything took off from the experience of moving in a space cadenced by the presence of these arches, capable of defining sectors and at the same time allowing an overall view of the environment. The desire was therefore to maintain the dining space of the restaurant as that of a large open space formed by this composition of arches, carving out two separate spaces solely for the kitchen and bathroom. In dialogue with the traditional material of exposed brick, it was decided to create a bubble of colour that would echo its tones, using a contemporary material in absolute contrast in texture such as resin.
At the centre of the space, as a pivotal element, is the bar counter, which emphasises the permeability of the spaces, crossing them with a single gesture and at the same time remaining the centre of gravity within the premises. In order to emphasise even more the domestic relationship between the consumer and the operator, it was decided to use a single dimension for the counter common to both the customer and the operating side, whose boundary is delimited only by a change of material; steel on the worktop and rosa tea marble for the customer countertop.
The ambition of the restaurant is to offer a large selection of wines from small producers accompanied by a research cuisine. Consequently, the design choice was to pursue a simplicity and authenticity of forms and materials while integrating it with an industrial atmosphere. Within this brick-coloured bubble, free elements in galvanised steel are inserted into the space. Technical elements are not hidden but are highlighted and made protagonists, such as the kitchen ventilation duct that sinuously crosses the space. Potentially decorative elements, on the other hand, are reduced to pure function, such as the galvanised steel shelving or the wall-mounted and hanging site lamps. These elements in their essentiality let the hundreds of labels on offer catalyse the customer’s attention in line with the restaurant’s philosophy.
